Vintage Recipe – Curried Sausages

I don’t know about you my friends but during COVID I have found myself seeking out old recipes from my childhood. Perhaps it’s a comfort thing. Maybe it’s wanting to keep things simple. I’m not sure but I am loving connecting with the past. During this process I came across my copy of The Commonsense Cookbook. I was given this book by my mother when I left home at 18 so that I could take care of myself. Boy did I use it a lot. Curried Sausages were one of my favourites.

The only trouble with cooking these great old dishes is sometimes they don’t necessarily photograph well!! Rest assured though they taste great. If you have small children at home they will love it. The thing I love about the vintage recipes is that they use simple ingredients that you would normally have at home. They are also usually inexpensive.

The Cooking process

You need to slice one onion. Peel and chop an apple and a carrot. Now I usually chop my carrot in small pieces however thought that it might look more appealing julienned, so please yourself how you do this. Add Butter to your pan and fry onion and apple until the onion is soft. Add in the curry powder and flour and cook.

You will then want to add in the stock and stir until the sauce thickens. Add the carrots, sausages and beans (I have also used frozen peas). Now you will notice from the following photo that I have left the sausages whole. Again, I normally slice the sausages and if you have small children I would recommend doing this. It will make it much easier for them to handle. I was hoping that leaving them whole would make for better presentation. The jury is still out on that one!!! Just a quick note about the sausages. I use Hans BBQ Sizzlers as you can see in the above picture. They are skinless and perfect for this recipe. If you love crumbed sausages these are also perfect for making those. This recipe will work with normal sausages but I would suggest that you boil and skin them first.

Okay so I warned you that many of the old recipes are hearty and delicious but pretty unattractive. Well curried sausages, even left whole (lol) don’t really look great in a photo. Trust me though, your family will love them. I usually serve with rice, especially if I’m in a hurry, but they are also delicious served with mashed potato. Let me know what you think. Curried Sausages

Ingredients

  • 1 Apple
  • 1 Onion
  • 60 grams Butter
  • 2 Carrots
  • 1 cup Green Beans (frozen or fresh)
  • 2 cups Chicken Stock
  • 2 tsp Keens Curry Powder
  • 2 tbsp Flour
  • 500 grams Sausages I use the ones pictured because they are skinless and kids love them

Instructions

  • Finely slice the onion (I used a red onion because that was all I had but any onion will work with this recipe);
  • Peel and finely chop the apple.
  • Peel and julienne carrots.
  • Fry both the onion and apple with the butter until the onion softens.
  • Add curry and cook for 1 minute. Then add flour and cook for 1 minute. Pour in stock and stir until sauce thickens.
  • Add in carrots and simmer until they soften.
  • The sausages and beans are added next and cooked until both are heated through. Approximately 10 minutes.
  • Serve with rice or mashed potatoes.

Notes

This recipe freezes well.
