Salmon Pie for an easy dinner

If you’re after an easy use what you have recipe for dinner. My salmon pie is it.

Its quick and can be adapted to use vegetables you have on hand. I’ll give you the standard ingredients I use. Don’t be afraid to substitute though you might just come up with another winner!

I do a lot of the steps for the recipe in the microwave because I’m usually making it in a hurry. If you prefer to do it on the stove top you can. You would do it the same way you do a white sauce or roux.

Preparing the salmon pie

Melt the butter in the microwave and then add the flour. I have detailed instructions on timing etc in the recipe at the end of the post.

I think I need to find some recipes that actually look good in photographs!!! Honestly it might look a little unappealing but it’s delicious. Its cost effective and family friendly.

The next step is to add the spring onions, carrots and zucchini. If you decide to use a vegetable other than zucchini you might want to add another 1/3 cup of stock to your mix. A fair bit of liquid comes out of the zucchini that you wont have if you use something like beans. If your mix looks dry compared to the picture below then go ahead and add more liquid.

Now you can add in the salmon, corn and rice. Don’t worry if your mix has a bit more liquid then the above picture. The rice will absorb quite a bit of liquid in the baking process.

You now need to pour the mixture into your pie dish and let it cool before covering with pastry.

Now for the pastry

I just use bought puff pastry for this, again because I want to keep it quick and easy. If you have a great recipe for making your own and have the time I’m sure if would be amazing!

I did a quick design on top but you can be as creative as you want. Or if you have even less time than I had today just put one sheet on top. Done! I hope you enjoy this recipe as much as we do.

Salmon Pie

Ingredients

  • 75 grams butter
  • 1 1/3 cup chicken stock
  • 210 gram can of pink salmon
  • 1 large zucchini (grated)
  • 1 large carrot (grated)
  • 250 grams cooked rice
  • 1/3 cup plain flour
  • 1 cup cheese (grated)
  • 1 can corn kernels (420g)
  • 2 spring onions (chopped)
  • 2 sheets puff pastry

Instructions

  • Preheat oven to 180°C
  • Microwave butter for 20 seconds on high. Stir and do for another 20 seconds.
  • Add flour and microwave on high for 1 minute. Give it a good stir.
  • Start adding in the chicken stock 1/3 cup at a time. Stirring well between each addition.
  • Microwave on high for 1 minute. Stir. Microwave for another minute and stir well.
  • Add carrot, zucchini, spring onions and cheese.
  • Microwave on high for 1 minute and then stir. You will need to do this 5 times until the vegetables have softened.
  • Add corn, salmon and rice. Stir well and then place in pie dish to cool for 10 minutes.
  • Add pastry on top. Brush with egg wash or cream and bake for 25-30 minutes until the pastry is golden brown.
