Biscoff Blondie

Unlike traditional brownies, Biscoff blondies are made with creamy Lotus Biscoff cookie spread and white chocolate for an incredibly delicious flavour combo. With its rich flavour and decadent texture, these sweet treats are sure to become a hit at any gathering. Making my Biscoff blondie recipe won’t take much effort while bringing maximum delight.
Bliscoff Blondies
Equipment
- Stand mixer (or handheld mixer)
Ingredients
- 225 grams butter (room temperature)
- 110 grams sugar
- 110 grams brown sugar
- 2 tsp vanilla
- 2 eggs (room temperature)
- 260 grams plain flour
- 150 grams white chocolate
- 150 gram Biscoff cream filled biscuits
- 12 Biscoff biscuits (non cream filled) (broken into small pieces)
- 200 grams Biscoff spread
Instructions
- Preheat oven to 165C°. Line a slice tin with baking paper.
- Roughly break the cream filled biscuits into smaller pieces.
- Using an electric mixer beat the butter and sugars for 4 minutes or until light and fluffy. Add in the eggs and vanilla one egg at a time. Mix until combined, scraping down the sides after adding each egg.
- Add flour and mix very gently until just combined.
- Gently fold in white chocolate and filled biscoff biscuits.
- Transfer to the lined slice tin. Smooth the top.
- Add dollops of Biscoff spread over the top of the batter and spread over the surface. Top with the remaining plain biscuits.
- Bake in oven for 30-35 minutes. The middle should be a little wobbly. If you find the brownie getting too brown before its cooked cover in foil to finish the cooking.
- Cool in refrigerator and then slice into small squares.

Orange Brownie
Equipment
- Stand Mixer or Hand Mixer
Ingredients
- 200 grams dark chocolate
- 3 Terry's Chocolate Orange balls
- 200 grams butter
- 4 eggs
- 275 grams caster sugar
- 90 grams plain flour
- 35 grams cocoa
- zest of half an orange
Instructions
- Preheat oven to 165C° (330F°).
- Line a slice tin with baking paper.
- In a microwave safe bowl, add dark chocolate, butter, and 1 Terrys Orange ball. Microwave on 30 second bursts, stirring each time until melted. Set aside to cool.
- Use you mixer to whisk the eggs and sugar until pale and doubled in size.
- Roughly chop the remaining 2 Terrys Orange balls and set aside
- Poor the cooled chocolate mix into the egg mixture and fold together gently. This will take some time but don't rush it or go to hard you don't want to knock out all the air.
- Gently fold through the chopped Terrys chocolate.
- Pour into the prepared slice tin and bake for 30-40 minutes. If the brownie starts to burn around the edges cover it with foil. It will be done when it just wobbles slightly in the centre. Allow to completely cool in the pan before slicing.
