If you’re like me, you often have last minute guests show up for lunch and you’re left without a plan. Well, I’ve got the perfect solution for you! This easy and delicious lunch can be whipped up in no time and is sure to please your guests. So next time someone drops by unannounced, surprise them with this tasty treat!

I love recipes that use ingredients I usually have on hand and this recipe is the best. With only a few everyday ingredients it will become your go to for unexpected guests.

The Ingredients

The reason this tart is so great for unexpected guests is because it uses very simple ingredients.

  • Frozen shortcrust pastry – of course you can use homemade if you would prefer
  • eggs
  • milk
  • sour cream – if you don’t have sour cream regular cream will work. I use sour cream because it stops the tart tasting too sweet
  • nutmeg
  • cherry tomatoes – you can use any tomato even large ones chopped
  • basil – fresh is best but I have used semi dried and it’s still tasty
  • feta cheese – I used marinated feta for todays tart because thats all I had. I love using plain danish feta but any feta will do.

This simple tart is all about the presentation. Making it is easy. You don’t need to stress over your pastry looking perfect or the top of the tart looking smooth. This is rustic baking and thats why its the perfect quick easy and delicious lunch idea for unexpected guests.

There are two ways you can serve this tart. The first one is as I did on a serving platter with the toppings centred on top. The other way is to cut the individual portions and arrange the topping nicely on each plate. Both ways look great, the second way just takes a little longer but does mean that everyone has enough topping. Whatever you decide your guests will love it.

Egg Tart with Tomato, Feta and Basil

Servings: 4

Ingredients

  • 2 sheets ready made shortcrust pastry See Notes
  • 5-7 eggs Depending on the size of your tin. I used 5
  • 2 tbsp sour cream
  • 1/2 cup milk
  • fresh nutmeg See Notes
  • cherry tomatoes
  • Danish feta See Notes
  • fresh basil See Notes

Instructions

  • Line a greased tart tin with pastry and blind bake for 10 minutes. Remove the baking beads and bake for a further 2 minutes. Remove from oven and set aside.
  • Whisk 5 eggs together with the milk and sour cream until combined. Grate a pinch of fresh nutmeg and whisk again.
  • Pour into your prepared tart tin and back for 25 minutes. You tart will fluff up during the cooking process but it will settle down once you remove it from the oven.
  • Top warm tart with halved cherry tomatoes, crumbled feta and fresh basil. Serve and enjoy.

Notes

  1. You can use home made pastry if you prefer.
  2. I like a fairly thing egg tart so I only use 5 eggs if you prefer a thicker result then add some additional eggs.   Little tip – always crack your eggs into an a separate bowl before adding to your recipe.  This way if one of your eggs is bad it will not ruin all of your ingredients.
  3. You can use dried nutmeg and basil if that is all your have on hand.  I usually have some semi dried basil which is pretty good.
  4. You can use marinated feta, greek feta, or danish feta, whatever you have on hand is fine in this recipe.
  5. You can also add some cheddar cheese to the tart before baking for additional flavour.
