Rocky Road
Rocky Road and Christmas go hand in hand for me. I like to make several different flavours for the season.
Caramilk almond
The first flavour this year is Caramilk Almond. There are only a few ingredients for this one so its nice and simple.
Caramilk Almond Rocky Road
Ingredients
- 4 blocks of Caramilk chocolate approximately 720g
- 200 grams roasted almonds (1 cup) you can used honeyed macadamia nuts for something different
- 200 grams large white marshmallows (1 cup)
- 200 grams Maltesers (1 cup)
Instructions
- Line a slice tray with baking paper.
- Add chocolate to a large glass microwave safe bowl. Microwave on high for 20 seconds at a time. Stir between each 20 seconds. Don't be tempted to put it on for longer as the chocolate will burn quickly.
- Add the marshmallows and almonds but let the mixture cool down before adding the Malteesers. If you put them in when the chocolate is too hot the outside will melt right off?
- Pour mixture in to prepared slice tin and refrigerate for 2-3 hours.
- Bring rocky road to room temperature before slicing into squares. If you try to slice straight from the fridge it will crack and you will end up with a mess.
Snickers Rocky Road
Perfect for a quick treat or an indulgent dessert, this easy recipe combines creamy milk chocolate, crunchy peanuts, rice bubbles and gooey marshmallows. Put aside a few minutes of your time and follow along as we give you all the tools necessary to make your own delectable version of Snickers Rocky Road in the comfort of home!
Snickers Rocky Road
Ingredients
- 240 g chopped Snickers bars I used the fun size ones because it worked out cheaper at the time.
- 1 cup Rice Bubbles
- 150 g white marshmallows
- 150 g roasted peanuts I used salted but unsalted would work too if you don't like the idea of salted
- 400 g milk chocolate
- 2 teasp coconut oil
Instructions
- Line a slice pan with baking paper.
- Combine rice bubbles, snickers, marshmallows and peanuts in a large bowl and mix well.
- In a microwave safe bowl melt chocolate and coconut oil on medium for 30 second intervals, stirring between each one until chocolate has melted and is smooth. Allow to cool for 5 minutes.
- Add chocolate to rice bubbles etc and mix well.
- Pour mixture into the prepared pan and smooth out.
- Refrigerate until firm. Remove from fridge 20 minutes before cutting to make it easier.
- Will keep in fridge for at least a week. Can be frozen for two months.
