Crush biscuits by either putting in a food processor or by putting the biscuits in a ziploc bag and rolling over it with a rolling pin. It doesn't matter if you process fine or have a few chunky bits of biscuit, its all good.
Add all ingredients into a bowl and mix together well.
Roll into balls and then in to the coconut. You can make whatever size you like. I prefer using about a tablespoon of mixture per ball.
You can eat immediately, keep in the refrigerator for at least a week or do as I do and freeze until required.
