Curried Sausages

I use the ones pictured because they are skinless and kids love them
Instructions
Finely slice the onion (I used a red onion because that was all I had but any onion will work with this recipe);
Peel and finely chop the apple.
Peel and julienne carrots.
Fry both the onion and apple with the butter until the onion softens.
Add curry and cook for 1 minute. Then add flour and cook for 1 minute. Pour in stock and stir until sauce thickens.
Add in carrots and simmer until they soften.
The sausages and beans are added next and cooked until both are heated through. Approximately 10 minutes.
Serve with rice or mashed potatoes.
Notes
This recipe freezes well.
