Easy Caramelised Peach Parfait

Servings: 4 parfaits

Ingredients

  • 1 can Sliced Peaches in juice
  • 2 tsps Butter
  • 1 cup Granola
  • 2 cups Plain Yoghurt (I used Coconut Yoghurt but you could use Greek Yoghurt or whatever your favourite is)
  • 1/2 cup Chocolate Chips
  • 1/2 cup Blueberries

Instructions

  • Drain the Peaches - reserving the liquid.
  • Add 1 tsp butter to a small frying pan and then add the peaches. Cook on medium heat, turning the peaches several times until softened. Remove from heat and cool. This step can be done the day before
  • While the peaches are cooking place the liquid in a small saucepan and boil down to about 1/4 cup. Remove from heat and stir through the remainder of the butter and set aside to cool. This step can be done the day before
  • Choose wide mouthed glasses or even small mason jars will work. Start with 1/2 cup of yoghurt in the base of each glass, top with several slices of peaches (just divide what you have between the glasses).
  • Drizzle the peaches with the reduced juice. Top with granola, choc chips and blueberries. Enjoy!!
