Mini Meatball Subs

Ingredients

  • 500 g ground beef
  • 500 g ground pork
  • 1 tsp onion powder
  • 1 tsp salt
  • 2 lge eggs
  • 100 g parmesan cheese (finely grated)
  • 1 cup panko breadcrumbs
  • ¾ cup water
  • 400 ml passata
  • 1 can tinned chopped tomatoes
  • 1.5 tsps italian seasoning
  • 16 mini bake at home rolls
  • 1 cup grated cheese (tasty or your favourite cheese)
  • fresh basil leaves for serving

Instructions

Meatballs

  • Line a large baking tray with baking paper.
  • Preheat oven to 170℃.
  • Combine beef, pork, onion powder, salt, eggs, cheese, breadcrumbs and water into a large bowl.
  • Use your hands to mix everything together really well.
  • With a small cookie/meatball scoop, scoop mixture onto the baking tray until all mixture is used. This recipe will make a lot of meatballs so depending on the size of your baking tray you may require two.
  • Bake in the oven for 15 minutes until lightly browned.

Tomato Sauce

  • Combine all ingredients in a large saucepan on a low heat and bring to a simmer.
  • Simmer for 10 minutes - then drop the cooked meatballs (and all juices) into the sauce and cook simmering for a further 10-15 minutes until reduced and thicker.

To Serve

  • Slice rolls through the top and remove bread in a triangle to allow room for the meatballs. (I have done a video for this recipe if you need to see how this is done and you will find the link in the blog post)
  • Butter each roll. Add 2-3 meatballs into each and top with a little of the sauce and some grated cheese. Please rolls into a baking pan and pack tightly so they don't roll over.
  • Bake for 10 minutes until lightly browned on top. Serve with fresh basil.
