Mum’s Easy Corn Chowder
When we were kids my mum always made Corn Chowder during the winter. It is so delicious and very much a big bowl of comfort.
We didn’t have a lot of money growing up. My parents were very young when I was born. Because of this my mum became a very creative cook and could turn bits and pieces into an amazing meal. I like to think I inherited that skill. Some of my throw together meals end up being family favourites.
It’s been many years since I made Mum’s easy corn chowder but felt compelled to dig the recipe out this winter.
As meat was often very expensive this recipe was perfect as it only includes a little bit of bacon. Those little bits of bacon had a huge amount of flavour though.
It’s also a nice quick recipe taking less than an hour from start to finish. In my opinion you must serve this soup with some delicious crusty bread.
Mum’s Easy Corn Chowder
Ingredients
- 4 potatoes
- 1 onion
- 2 carrots
- 4 bacon rashers
- 1 tin Cream of Chicken Soup
- 1 tin corn kernels
- milk
Instructions
- Chop bacon into small pieces and fry in a large saucepan.
- While the bacon is cooking peel your potatoes and cut into thick strips, slice the onion and peel and chop the carrots.
- Add potatoes, carrots, onions, soup, corn (with the juice) and one can of water to the saucepan with the bacon.
- Simmer for 20 minutes and then add in one can of milk and cook until vegetables are tender – approximately another 10 minutes
- Serve with crusty bread.
The Cream of Chicken soup I used is Campbell’s Condensed Soup. If you can’t get this one any creamy chicken soup will work as long as its thick and creamy. I have used the chicken and corn soup before and its just as a delicious.
