Meatball Lasagne: A Delicious Way to Use Leftover Meatballs
One of the things I enjoy most in the kitchen is finding creative ways to use leftovers. Not only does it reduce food waste, but it also makes meal planning easier and helps stretch your grocery budget a little further.
Recently I shared my recipe for Mini Meatball Subs, one of the hot finger foods we served at Emily and Mitch’s woodland baby shower. The recipe makes a generous batch of meatballs, which is perfect when you’re feeding a crowd. However, if you’re hosting a smaller gathering, there’s a good chance you’ll find yourself with some leftover meatballs and sauce.
That’s exactly how this Meatball Lasagne came about.
With a few simple ingredients and very little extra effort, leftover meatballs are transformed into a comforting family meal that feels completely different from the original recipe.
Why I Love This Recipe
I’m always looking for ways to repurpose leftovers so they feel fresh and exciting rather than simply reheated. This lasagne is rich, comforting and full of flavour, yet incredibly simple to put together.
The meatballs create a hearty filling while the creamy ricotta mixture adds a beautiful richness. Fresh basil brings everything together and gives the dish a lovely freshness.
Best of all, it turns yesterday’s party food into tonight’s dinner.
Ingredients
For this easy lasagne you’ll need:
- Leftover meatballs and sauce
- Smooth ricotta cheese
- Sour cream
- Egg
- Grated cheese
- Fresh lasagne sheets
- Fresh basil
- Salt and pepper
- Olive oil
Method
Preheat your oven to 160°C (fan forced)
In a bowl, combine the ricotta cheese, sour cream, egg and half of the grated cheese. Season generously with salt and pepper and mix until smooth.
Finely chop the basil and stir half of it through the meatball mixture.
Lightly grease a small casserole dish with olive oil.
Spread a thin layer of the meatball sauce over the base of the dish, then cover with a layer of fresh lasagne sheets.
Top with half of the meatball mixture, followed by one-third of the ricotta mixture.
Repeat the layers with another layer of lasagne sheets, the remaining meatball mixture and another third of the ricotta mixture.
Finish with a final layer of lasagne sheets, spread over the remaining ricotta mixture and sprinkle with the remaining grated cheese.
Bake for approximately 35–40 minutes or until golden brown and bubbling.
Allow the lasagne to rest for 10 minutes before serving.
Scatter with the remaining fresh basil and serve.
From Party Food to Family Dinner
One of my favourite things about entertaining is that it often gives us wonderful leftovers to enjoy in new ways. This Meatball Lasagne is a perfect example.
The meatballs that delighted guests at Emily’s baby shower became a comforting family meal a few days later, proving that a little creativity in the kitchen can go a long way.

Ingredients
- 1 serve of leftover meatballs
- ½ bunch fresh basil
- 188 grams smooth ricotta cheese
- 150 ml sour cream
- 1 lge egg
- 1 cup grated tasty cheese
- 188 grams fresh lasagne sheets
