Caramel Mud Cake Recipe: Easy Layered Birthday Cake with Caramel Buttercream
Every year my birthday arrives alongside Emily’s birthday and our wedding anniversary, which makes for a very busy celebration week in our house.
This year, my friend Faye, or “Fayeleen” as I like to call her, decided to organise a birthday dinner and games night for Emily and me. She offered to take care of the food and entertaining if I handled the birthday cake.
Naturally, I agreed immediately because I never need much encouragement to bake a cake.
The only problem was that I left myself very little time to actually decide what kind of cake I was going to make.
Choosing the Perfect Caramel Mud Cake Recipe
Since caramel mud cake is one of Faye’s favourite cakes the decision was eventually made for me.
I created a layered caramel mud cake with caramel cream cheese buttercream and styled it to match the pink, white, and gold party theme she had planned for the evening.
While I’ll admit this wasn’t my most technically perfect cake, it was delicious, easy to assemble, and proof that celebration cakes don’t need to be flawless to feel special.
Sometimes simple and homemade is exactly what people remember most.

One of the best things about this caramel mud cake recipe is how straightforward it is.
The cake itself is rich, moist, and full of caramel flavour, but it doesn’t require complicated techniques or even a mixer. That makes it perfect for busy home bakers or last-minute celebrations.
This recipe also makes two cakes which allows you to create a layered birthday cake with minimal extra effort.
If you only need a single cake, you can simply halve the recipe.
Easy Naked Cake Styling
Because I was short on time, I decided to go with a naked cake finish rather than fully frosting the outside.
Naked cakes are one of my favourite entertaining shortcuts because they still look elegant while requiring far less effort and precision.
For this cake, I added:
- Caramel drizzle
- Pink, white, and gold toppings
- A light layer of caramel cream cheese buttercream
- Decorative sweets and chocolates
The result felt festive, fun, and perfectly suited to the party theme.
Cake Decorations and Toppings
One of the easiest ways to decorate a celebration cake is by using chocolates, sweets, and textured toppings.
For this caramel mud cake, I used:
- Musk sticks
- Cadbury Caramilk chocolate
- Macarons
- White chocolate Tim Tams
- Darrell Lea raspberry and white chocolate bullets
- Chocolate raspberry balls
- Raffaello chocolates
To soften the brighter pink tones and tie everything into the gold theme, I lightly brushed some of the decorations with edible gold dust.
It was a simple decorating trick but made a big difference visually.
A Celebration Cake Doesn’t Need to Be Perfect
Even though I don’t consider this my most polished cake, it tasted absolutely delicious and that’s really what matters most.
The caramel mud cake layers were rich and moist, the caramel cream cheese buttercream added the perfect balance of sweetness, and the decorations made it feel fun and celebratory without being overly complicated.
Sometimes the best cakes are the ones made quickly, shared with people you love, and enjoyed without worrying about perfection.
And honestly, when there’s caramel involved, nobody complains.

Caramel Mud Cake
Ingredients
- 400 grams butter
- 400 grams white chocolate
- 400 grams brown sugar
- 1 ½ cups hot water
- 2 tbsp golden syrup
- 4 tsp vanilla
- 4 eggs at room temperature
- 300 grams plain flour
- 300 grams self raising flour
Instructions
- Preheat oven to 160°c. Grease and line two 20cm cake tins.
- Place butter, chocolate, brown sugar, water, golden syrup and vanilla in a saucepan. Stir over medium heat until chocolate melts and mixture is smooth. Remove from heat and cool for 20 minutes
- Add eggs one at a time, beating well after each addition.
- Mix flours and whisk together thoroughly or sift to combine.
- Stir flours into chocolate mixture and mix with a wooden spoon until well combined.
- Pour mixture into the prepared cake tins and bake for 50 minutes and check with a skewer. If not cooked return for 5 minutes and test again. I found that I had to cook for a total of 60 minutes but it will depend on your oven.
- Leave cakes in the tins to cool for 5 minutes and then remove and cool on a wire rack until cool and then they are ready to decorate.
Caramel Cream Cheese Buttercream
Equipment
- Stand mixer
Ingredients
- 230 grams butter (softened)
- 125 grams cream cheese (softened)
- 225 grams Nestle Top and Fill caramel I used the rest for the drizzle on the cake
- 2 teasp vanilla extract
- 480 grams Icing sugar (confectioners sugar)
Instructions
- Using a stand mixer with paddle attachment (or hand mixer) beat butter on medium until creamy.
- Add cream cheese, caramel and vanilla. Beat on medium until fully incorporated. Increase speed to high and continue beating until light and fluffy. Scrape down sides of bowl as necessary.
- Reduce speed to low and gradually add icing sugar until well combined. Increase speed to high and beat until well combined and smooth. Scrape bowl as necessary. Will take approximately 2 minutes.
